Storage: Bags should be stored in heated premises with an ideal room temperature of 10C/50F. They should not be stacked in contact with cold outside walls or floors. After abrasive peeling, potatoes, or fresh chips should be immersed in water ir anti-oxidant solution at a temperature of not less tan 10C/50F. Failure to comply with these conditions may result in a sharp rise in sugar content, detrimental to the final chip colour. Cooking: Raw chips should be immersed in hot fat or oil at a temperature of not more than 182C/360F and not less than 160C/320C.
